Disable automountServiceAccountToken and other best practices

This package does not disable automountServiceAccountToken. Additionally, it doesn't seem to be following any of the best-practice configurations specified by cert-manager's documentation linked below. https://cert-manager.io/docs/installation/best-practice/#best-practice-helm-chart-values
