Move Mimir to it's own Namespace

Currently Mimir is being installed to the same Namespace as Prometheus (monitoring) as they're co-dependent; However this creates an anti-pattern as Big Bang expects each app to be contained within their own namespace.

• All Mimir resources are moved to its own Namespace
