Research Spike: Decide on (P)LG Stack Log Forwarder

Both promtail and fluentbit BigBang packages are able to send/forward logs to Loki for visualization in Grafana.

Evaluate which forwarder is best for this logging stack in terms of:

• configuration (multiple endpoints (S3/Loki/etc), possibly multiple Loki endpoints?, amount of fields/options for data sent in to Loki)
• performance
• reliability

AC: Take screenshots and notes of the differences between the two forwarders for all of the above bullets, and the data pulled up within Grafana and upload them to this issue.

Outcome of this research spike will dictate which forwarder will be used by default within BigBang's implementation of the Loki and Grafana logging stack.
