Revert the native sidecar injection

This was causing the loadbalancers to be recreated so we decided to revert this.

revert from:

• istio
• gitlab
• mattermost
• test-values in bb

then:

• merge into 2.32
• cherry pick into master
• open a ticket to revert all of this work
