Update Umbrella Templates to Remove Kiali Version and Label Additions

Now that Kiali has been modified to look for app.kubernetes.io/name and app.kubernetes.io/version there is no longer a need for the helper and injecting those labels in all of our umbrella charts. Once this MR is merged, all of those can be removed.
