postgres directory not accessible on rke2

Issue may affect other distros as well.

k logs -n anchore anchore-postgresql-64d96ddf6-ggmhk
mkdir: cannot create directory ‘/var/lib/pgsql/pgdata’: Permission denied

Potentially just need to point to a new directory for postgres data.
