Add Anchore Smoke Tests

Summary

With data-test UI tags being deprecated in Anchore Enterpruise UI 5.6.0, the Cypress tests won't be able to match on those fields anymore.

Possible fixes

We should look into using Anchore's built-in smoke-tests:

anchorectl system smoke-tests run
