Prometheus Anchore serviceMonitor

Summary

The serviceMonitor for multiple prometheus endpoints are not finding the anchore-enterprise targets properly.

Steps to reproduce

Deployed bigbang in our beta cluster using the values for base and beta's overlay on the reconfig branch. Use main branch values if the reconfig branch no longer exists.

What is the current behavior?

serviceMonitor/anchore/anchore-service-monitor/0 through /4 have no active targets.

What is the expected behavior?

They should have active targets and be 'green' not 'grey'

Possible fixes

My guess is that there is something misconfigured in the serviceMonitor template here
