Enable testing of Elasticsearch-kibana in testing

As ECK-operator is closely linked with elasticsearch-kibana, it would make sense to enable elasticsearch-kibana when tseting eck-operator. We should enable ek when manually testing (so add to doc) and in the package pipeline testing.
