Renovate prometheus-elasticsearch-exporter and test 1.7.0 image published by IB

Reference Mattermost chat with Joseph Karpp in BB <-> IB channel

IB has rebased a 1.7.0 prometheus elasticsearch-exporter image for the Elasticsearch-kibana chart dependency prometheus-elasticsearch-exporter. This chart dep needs a renovate and testing with the new image. Image is referenced in values for that dep chart.

1. Update to latest upstream chart version 5.7.0.
2. Test the functionality of this rebased image by viewing eck metrics in grafana using the prometheus data source.
3. Communicate any image issues to Joseph Karpp
