This one is going to be a pain. The ES / kibana charts have no input value for custom pod labels, and there are no explicit StatefulSets etc, only CRDs. There are six input values for podAnnotations, so we will need to create similar input values for podLabels then add them to all CRD manifests. Once that's merged in we can take advantage of them via the BB umbrella chart and pass in the actual key value pairs.

I got it all working except for the prometheus es exporter, will keep hacking at it tmw
