Determine postgresql replacement for Gitlab

The Gitlab chart is currently configured to use a postgres image provided by Bitnami, and we have stopped receiving updates for this chart in Ironbank.

Gitlab has stated they are working on a replacement and this has been the status since August 2025.

Possible solutions include CloudNativePG or a UBI image of postgresql, however these are not drop-in replacements and will require some engineering effort to get them to work with the upstream helm chart.
