Add workloadSelector for Loki Sidecar

Summary

Following the creation of a Sidecar resource for Loki in !150 (merged), Kibana/Elasticsearch tests are failing in Big Bang because the Sidecar does not include a workloadSelector. We should add a workloadSelector to the Loki Sidecar to avoid this problem.
