Move to deprecate the use of Endpoints in favor of Endpointslices for Monitoring

With Kubernetes v1.33 comes the deprecation of endpoints in favor for the Endpointslices (see blog)

We should look to the prometheus spec serviceDiscoveryRole in the upstream values.yaml.

Acceptance Criteria:

• Enable the serviceDiscoveryRole for the prometheus to EndpointSlices
• Ensure that this doesn't impact or introduce any issues with (or at least document) rollout
