Fix Renovate Configuration

Description

The most current Renovate MR appears to be updating the Nexus image to the wrong tag 3.75.0-06 -> 3.75.0-06-amd64 this should only be updated to non amd64 and/or non platform specific tags. This needs to be corrected in the renovate.json.
