Test and Document Production object-storage configuration

Currently Tempo is setup to store 2 weeks of traces locally within a PVC. Production environments should be encouraged to use external object-storage instead.

• Test Tempo talking to external object storage and add templates as necessary
• Document configuration and recommendations in a docs/production.md file within the package
• Ensure BigBang values for Tempo have an objectStorage block of values to pass through to the package when set
