Renovate config should check for tempo-query and opentelemetry images

The current renovate.json config is not checking for tempo-query or opentelemetry-collector images.

We will also need to add Tempo Query and Opentelemetry Collector versions to the Chart.yaml annotation for bigbang.dev/applicationVersions.
