Update software collections in default variables

Job #6124 failed for 6cba51ed690e9e6b2932ddff2a1c483ab15b0d0d:

Red Hat Software collections product name has changed from Red Hat software collections ( for RHEL Server) to Red Hat Software Collections for RHEL Server.

This needs to be updated in the project default vars in order for the IaS satellite installation to run properly.

Additionally, rename performance tuning task in organizational_config.yml to Running performance tuning.
