Enable ServiceMonitor or Install Exporter for Prometheus Metrics

Expose redis installation metrics to Prometheus. Enable via ServiceMonitor within the chart, or search for an exporter image/deployment we can have running alongside an installation of a redis cluster.

AC:

• Exporter and/or ServiceMonitor created and enabled
• ServiceMonitor endpoint showing up in Prometheus targets page
• Metrics successfully being scraped by Prometheus
