we owe you guys a conversation/discussion about how we want to handle these operator/cr installations moving forward.

Currently the only implementation we have is istio, which is split into istio and istiooperator. The minio in values.yaml was pre-maturely merged before we agreed on the actual path forward.

Going to set up a discussion so we can hash this out before merging this in
