Merge branch 'remove-gatekeeper-image' into 'master'

fix: image for gatekeeper is set in the chart and should not be hardcoded in the HelmRelease

Summary

closes #102 

Sorta.  It doesn't stop the conversation about the best way to provide configurations to Umbrella/charts, but should unblock @cassiesousa from updating the registries.
