• Grafana 8.5.X allows for searching through Tempo traces using linked Loki dataSources, this MR follows their upstream documentation to update the datasource via the values in the chart

• Adding editable: true to Loki datasource so it allows for editing/customization and isn't only alterable via the values file, no reason to keep it locked
