Enable Redis for CI: Authservice/Anchore

By enabling Redis for both Anchore/Authservice in CI we ensure that the images required are properly picked up.

The other option is add to tests/images.txt for each package, but keeping this in sync with the redis subchart would be more difficult to handle.
