We can't default to /oauth/* endpoints because the new migration to P1 Keycloak Quarkus will not support it.
Open to suggestions on how we can practically support using .Values.sso.oidc.host in the Mattermost values.yaml template. Unless we specify that only the path without domain name should be entered.
Also, not sure we want to default to Keycloak specific endpoints because ultimately we want to support other IDPs.
Also, the endpoints will already be defaulted in the in the Mattermost Package chart.
