Fluentbit CI values changes

Summary

Per nightly testing the Fluentbit test has been failing in master CI for about a week (since the last Fluentbit update).

In a few tests removing the custom input values seems to resolve this issue (possibly because it is processing more logs and sending them to outputs faster?).
