add thanos exceptions for allowedHostFilesystem/volumeTypes

Adds required gatekeeper exceptions for Thanos cypress

Thanos helm tests should be passing now when gatekeeper is enabled.

Prior to fix (as seen in the upgrade 1st test runs):
