updated kyverno values for metrics

Updated kyverno values to reflect changes in package helm values for setting the metrics: namely adding service monitors and the Kyverno Metrics grafana dashboard

(This values update was noted in the most recent kyverno renovate, however the values changes are compatible with older kyverno versions as well, so not linking the renovate MR)

I think these should be enabled somewhere but currently this could cause issues (or not work as expected) because the kyverno HelmRelease installs before monitoring, so the ServiceMonitor CRD would not be available at fresh install time.
