Configure Big Bang MinIO for Mimir

Ensures that the Big Bang MinIO is configured for Mimir (see package level MR below). Changes in BB umbrella with this MR:

• Configures the mimir/template/values.yaml with the remote write to the MinIO tenant service
• Add the MinIO tenant as an exception for the automount service account
• Enable a quick configuration of inputting root/user credentials at the BB umbrella values.yaml
• Set default MinIO credential/tenant configuration when MinIO is enabled
