We also have the minio: install variable. I'm wondering if that comes into play here too

I added some initial, alternative changes here: !5651 (closed)

Reaching out on MM to @benjamin.starks and @kershaw.jacob to look over.

going to push this back to doing/DRAFT for now. We're hoping to get more insight into the issue, since we're not fully understanding the config that is causing the problem.
