Validate/test bigbang all packages deployment on EKS. Enable core and addons.

Validate that all packages can successfully install to bigbang. Enabled core and addons. Recommend doing this on a static cluster outside of CI to start. Disable any packages that fail to install. Create separate issues for troubleshooting each package that will not install to EKS with bigbang chart.
