Summary

Downgrade redis to match gitlab version here: https://repo1.dso.mil/big-bang/product/packages/gitlab/-/blob/main/chart/requirements.yaml?ref_type=heads#L28

Conflicting versions will bump into each other with the templating engine, causing errors with the common.standard.labels helper functionality.
