Update renovate.json to account for newer redis chart versions

Summary

Renovates don't appear to be catching the redis chart updates specifically when updated at our -bb.x versioning and thus not using the most up to date charts for multiple renovates.

Possible fixes

Update renovate.json to account for newer redis charts when the upstream redis chart does not update.
