Draft: Updated test-values.yaml to load in default data sources

Jimmy Bourque requested to merge Patch-Fix-Grafana-Data-Loading-Tests into main

Tests were passing even though no data was being loaded into the Grafana dashboards. Added additional values into test-values.yaml to ensure default data source was present and showing actual data.
