Resolve "Permission denied when using "cache" in gitlab-ci.yml"

kevin.wilder requested to merge 5-gitlab-runner-cache into main

When using cache in a CI pipeline the runner is unable to write to the default directory /cache due to ironbank hardened image. Fixed by configuring a different cache directory.

Also tweak some documentation.
