clean up test values

Add image pull secrets, remove image name.

This one might need some more work...right now the pipelines install istio via istioctl and don't have kiali or jaeger. We can definitely add the BB Istio as dependencies for HAProxy so that we can truly test it, but that might be better held off to be tackled as part of a larger epic/issue to test the packages (would require some pipeline infra changes to make sure we can turn off istio install/toggle on BB istio install).

Happy to revisit as part of this MR if needed though...
