Update baby-yoda JSON within package with clients for all BigBang applications

Update the chart/resources/dev/baby-yoda.yaml file to include Clients and Client Scopes for all applications that are able to be configured with SSO.

We would like to eventually be able to load this Realm JSON file in CI and perform E2E tests for Keycloak and the other applications.

AC: Within a Keycloak instance, create Clients for the following applications, following their docs/Keycloak.md instructions within the package:
