fix(values): updated default values to no longer reference existing db secret; fixed VS templating

Summary

This MR corrects an issue first encountered in the release cluster where the virtual service does not create the keycloak host using the passed in .domain value.

It also removes references to secrets that don't exist that were interfering somewhat with configuring keycloak's db credentials
