Fix logging NS authpol for loki/minio

Summary
The authorizationPolicy - allow-intranamespace.yaml was not being appliec to the minio instance that is needed for Loki.
After consulting with @andrewshoell it was decided to remove the matchLabel's for now with the intent of adding more granularity later as he works through his epic.
Still working through related issue with the minio-operator
