feat: Mattermost 5.31.0

Update Mattermost to 5.31.0 and use the new operator (1.12.0) resource Mattermost. Additional features:

  • Standard CI/CD Pipeline
  • Prometheus integration when monitoring and enterprise are enabled
  • SSO Integration with Keycloak (templated out, docs as well under docs/keycloak.md)
  • Integration with Minio and Postgres operators to spin up internal instances for pipelines
  • Docs updates, standard changelog, contributing, etc
