SKIP UPDATE CHECK Synchronize with upstream chart

Summary
Per this conversation on the umbrella MR for this renovate version, I have attempted to better synchronize the chart with its upstream counterpart. Some drift had developed over the past several months.
Additionally, I attempted to remove unused items from values.yaml and more fully document some of the required changes that must be maintained. There is still more work to be done in this area.
