downgrades syft to version 1.0.1

Rob McCarthy requested to merge hotfix/downgrade-syft into master

we are seeing some failures by syft 1.1.0 to process object files in the pipeline. we suspect this was introduced during last weeks release of syft. we are reverting to 1.0.1 where local testing has not shown nil pointer dererference while processing object files.
