[BB-308] Removing extraneous status def from monitoring CRDs

Status: definition at very bottom of CRDs is causing ArgoCD to list resources as in a syncing state eternally. Removing the status definition from the YAML alleviates the issue and doesn't cause issues with other resources in the monitoring namespace.
