Allow for mounting of CA for OIDC communication from ECK

The elasticsearch-kibana helm chart requires the ability to mount something like a secret into the Elasticsearch containers, and add to the OIDC setup to specify a certificate_authority for the SSL communication.

Support for altering the certificate_authorities section for the Elasticsearch resource was integrated with tag "0.1.10-bb.2" and this MR

Working on updating documentation within package for specifying a certificate authority for Elasticsearch and closing.
