Continuing the conversations here with @michaelmartin about enabling MinIO when loki deployment is scalable from thread: !5733 (comment 2995419). Loki scalable should be used with MinIO deployment, otherwise the following error when trying to default to filesystem takes place:

logging/logging-loki with chart loki@6.25.1-bb.0: execution error at (loki/templates/validate.yaml:19:4): Cannot run scalable targets (backend, read, write) or distributed targets without an object storage backend.

Closing this MR as MinIO is only for dev work and when enabling scalable s3 should be used instead
