turn off minio vs by default

Issue opened to resolve this at the minio repo level - https://repo1.dso.mil/platform-one/big-bang/bigbang/-/issues/282

For now need a workaround since we're trying to merge in a bug fix for mattermost/minio - https://repo1.dso.mil/platform-one/big-bang/bigbang/-/merge_requests/351

See this pipeline run, solves the weird issue where cypress was passing but the pipeline failing. Apparently the way this find command works is running all the scripts and then failing if one of them failed.
