adding catch for database image in values to mirror chart

The current renovate config misses database.image in the Values file, which is an issue when the related postgres image changes. Renovate auto-fixes the chart (as tracked in SBOM) but not the actual intended reference. This causes image_annotation_validation to fail after Packages Tests are finished.
